This is a video I saw on another website that shows the basics of how to butcher rabbits along with all of the other details necessary to go from live animal to meat ready for cooking.

Rabbits are often listed in the top two animals for preppers to raise to either be self-sufficient or to augment their food supplies. Chickens would be the other obvious choice as they are both easy to raise and relatively low-cost to take care of. Rabbits are prolific breeders so the potential for fresh meat very regularly is the prime motivation.

Rabbits don’t need pastures or a barn, just a simple enclosure and basic tending to much like raising chickens. Rabbits breed and grow so quickly that one pair of healthy does (females) can produce more than 600 pounds of meat in a year. There are many different types and breeds so the rate varies. Multiply that by a dozen or so rabbits and add in a bunch of chickens and you could eat meat every day if you play your cards right. This video is from a manufacturer of harvesting equipment, but it does illustrate nicely the process. Again, the first part is not for the faint of heart.
